  • 30 g sugar (or more to taste)
  • 1 packet vanilla sugar
  • 250 g low-fat quark (or soy quark/soy skyr) Use soy alternatives for vegan version.
  • 220 g flour type 405 or 630 Can substitute with other types of flour.
  • 1 tsp baking powder (or 1.5 tsp if not using eggs)
  • 50 g chocolate chips Feel free to experiment with different chocolate types.

Method

Mixing the Dough
  1. In the Thermomix, place eggs (or soy milk), sugar, and vanilla sugar into the mixing bowl. Mix for 10 seconds on speed 5.
  2. Add the quark, flour, baking powder, and chocolate chips. Mix for 40 seconds on dough mode.
  3. For the vegan version: If the dough is too runny, mix in a bit more flour.
Shaping the Dough
  1. Use a small ice cream scoop to place the sticky dough onto baking paper. Make sure the rolls are small.
Cooking
  1. In the Air Fryer: Cook for about 7 minutes at 200°C (without preheating) on a low fan setting, watching until the rolls have some color.
  2. In the Oven: Bake for about 10-15 minutes at 200°C (convection, preheated) until the rolls are golden.

Notes

These rolls are best served warm. You can enjoy them as they are or spread some butter or jam on top for extra flavor. If you have any leftovers, store the rolls in an airtight container at room temperature for up to 2 days. You can also freeze them for future treats. Just thaw and warm them up before serving!
